Tomato Salad

Enjoy this tomato salad on its own, on hummus toast or on anything, really.

A quick recipe that can be multifunctional throughout the week. Tastes even better the second day! Mix things up by subbing out the jalapeño for herbs such as dill or basil.

  • 2 tbsp olive oil

  • salt, to taste

Ingredients

  • 2 punnets cherry tomatoes (approximately 3 cups), sliced

  • 1/2 red onion, finely chopped

  • jalapeño, finely chopped (to taste)


Method

  1. Combine tomatoes, onion and jalapeño in a bowl.

  2. Season with salt, add the olive oil and mix.

  3. Serve on hummus toast, eggs or on its own.
