Mint Chocolate Energy Bites

Energy bite are a great way to pack in a nutritional punch.

These are another variety of energy bites that are made in the food processor for a smoother texture and require no baking. They also have a hint of mint, which is refreshing but also make a great holiday treat.

  • 1/8 tsp mint extract

  • 2 tbsp water

  • 1/2 cup unsweetened shredded coconut

Ingredients

  • 12 Medjool dates, pitted

  • 1/4 cup blanched almonds

  • 1 scoop plain protein powder

  • 1 1/2 tsp unsweetened cocoa powder


Method

  1. Before getting any of the other ingredients ready to use, soak the dates in warm water for 8-10 minutes so they soften.

  2. In a food processor, add the softened dates and pulse until finely chopped.

  3. Add the almonds, protein powder, cocoa powder, mint extract and water to the food processor and pulse until well combined.

  4. Remove the mixture from the processor and roll into 1-inch balls.

  5. Place the coconut in a small bowl. Roll each of the energy bites in the coconut to coat them. 

  6. To ensure they last, store them in the fridge. If you want to keep them extra-long store them in the freezer - they will last longer but also are very quick to thaw out so you can pull them out right before you head out for the day and they will be ready to enjoy in no time.
