Grandma’s “Sexy” Eggs

My grandma has been making this for as long as I can remember.

It started as a concoction of all the vegetables in her fridge being sauteed with eggs being steamed over top. This recipe is my favourite version as nothing beats caramelized onions and jammy tomatoes with a little bit of spice. It is routinely a breakfast, lunch or dinner in our house.

  • Jalapeño, finely chopped, to taste (option to replace with other chillies or chilli flakes)

  • Salt, to taste

  • 4 eggs

Ingredients

  • 1 tbsp olive oil

  • 1/2 large onion, diced

  • 1 large tomato, diced

  • 1 tbsp cilantro (optional)


Method

  1. Heat olive oil in a nonstick pan over medium heat. Add onion, tomato, cilantro and jalapeño and sauté until slightly caramelized, about 3 to 5 minutes.

  2. Add eggs on top of vegetables and cover, allowing them to steam.

  3. Cook until desired doneness. Serve with toast or roti.
